Tatsoi is a highly versatile, cold-hardy, and fast-growing Asian leafy green known for its dark green, spoon-shaped leaves and mild mustard flavour. Often used as a spinach or Pak Choi substitute, it can be eaten raw in salads, wilted, or stir-fried, thriving in autumn/winter and forming a low-growing, nutrient-dense rosette.
